Healthy Week Night Recipe #5: Chickpea Stir-Fry with Spinach and Feta

This recipe can be prepared in 30 minutes or less and uses wholesome ingredients to create meals that are nutritious, flavourful and satisfying. 

Description: 

A vegetarian stir-fry loaded with plant-based protein and leafy greens.

Ingredients: 

Chickpeas, spinach, feta, garlic, red pepper flakes, lemon juice.

Instructions:

  1. Heat 1 tablespoon olive oil in a skillet over medium heat.
  2. Add 1 can drained chickpeas and cook until lightly golden, about 5 minutes.
  3. Stir in minced garlic and red pepper flakes; cook for 1 minute.
  4. Add 4 cups of spinach and cook until wilted, about 2 minutes.
  5. Remove from heat, toss with lemon juice, and sprinkle with feta.
