Ingredients:
For the Loaf:
- 1 cup cooked green lentils
- 1 cup walnuts, finely chopped
- 1/2 cup rolled oats (gluten-free optional)
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 tbsp ground flaxseed + 2.5 tbsp water
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and pepper to taste
For the Cranberry Glaze:
- 1/2 cup fresh cranberries
- 2 tbsp maple syrup
- 1/4 cup orange juice
Instructions:
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a bowl, mix ground flaxseed with water and let sit for 5 minutes.
- Combine all loaf ingredients in a food processor and pulse until well combined but still textured. Press into the loaf pan.
- In a small saucepan, simmer cranberries, maple syrup, and orange juice for 10 minutes until thickened. Spread over the loaf.
