Ingredients:
For the Loaf:

  • 1 cup cooked green lentils
  • 1 cup walnuts, finely chopped
  • 1/2 cup rolled oats (gluten-free optional)
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp ground flaxseed + 2.5 tbsp water
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and pepper to taste

For the Cranberry Glaze:

  • 1/2 cup fresh cranberries
  • 2 tbsp maple syrup
  • 1/4 cup orange juice

Instructions:

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a bowl, mix ground flaxseed with water and let sit for 5 minutes.
  3. Combine all loaf ingredients in a food processor and pulse until well combined but still textured. Press into the loaf pan.
  4. In a small saucepan, simmer cranberries, maple syrup, and orange juice for 10 minutes until thickened. Spread over the loaf.
  5. Bake for 45 minutes. Let rest for 10 minutes before slicing. Enjoy!
