Instructions

  1. Cook 1 cup of quinoa according to package instructions.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  3. Add 1 pound of shrimp, minced garlic, and cook until shrimp turn pink, about 3-4 minutes.
  4. Stir in lemon juice, zest, and chopped parsley.
  5. Serve shrimp over cooked quinoa and garnish with extra parsley.
